I hope you don&#039;t need sleep, and can lift a pig on your own.  I would strongly suggest having at least two people involved in the process.  To answer your question, we used charcoal, started it probably 2-3 hours before putting the pig on.  We added coals every 40 minutes, and we just sewed the pig with butcher twine.
